The end product tastes like a delightful mix of apple cake, spice cake, and moist carrot cake, all rolled into one. Morning Glory Muffins originated from the Morning Glory Cafe in Nantucket in the 1970s. They soon gained popularity as a kind of ‘hippie muffin’ due to their hearty composition of earthy, crunchy ingredients.

Whole Grain Morning Glory Muffin Recipe

Ingredients:

  • 1 ½ cup whole wheat pastry flour
  • 1 ½ teaspoon baking soda
  • 2 teaspoon ground cinnamon
  • 2 cage-free eggs
  • 2 teaspoons pure vanilla extract
  • 1 Fuji or Granny Smith apple (cored, peeled, and diced)
  • ¾ cup seedless raisins
  • 1 large carrot, grated
  • ½ cup toasted finely chopped walnuts
  • ¼ cup unsweetened flaked coconut, divided

Instructions:

  1. In a large bowl, combine the whole wheat flour, ground cinnamon, and baking soda.
  2. In a separate bowl, whisk together the applesauce, sweet potato puree, honey, vanilla extract, and eggs. Add this to the flour mixture and stir until combined.
  3. Add the diced apples, raisins, chopped walnuts, grated carrots, and half of the coconut flakes to the mixture. Stir gently until well combined.
  4. Spoon the batter into 16 paper-lined muffin tins.
  5. Sprinkle the remaining coconut flakes on top of each muffin.
  6. Bake at 350 degrees F for 25 to 30 minutes.
