INGREDIENTS

        

  • One can be drained and rinsed black beans
  • Two tablespoons of olive oil.
  • One bag of blue corn tortilla chips
  • One can drain fire-roasted diced tomatoes
  • One small onion
  • 1 ½ cups shredded Monterey jack cheese

 

INSTRUCTIONS

  • Take one can of black beans and add two tablespoons of olive oil and crush them using a fork
  • Take a bag of blue corn tortilla chips and spread over a baking parchment.
  • Put the spoon bean mixture over chips and spread tomatoes over them.
  • Sprinkle one small finely chopped onion and 1 ½ cups of shredded jack cheese over it
  • Broil it until the cheese is melted and bubbly.
