Raw Cherry Crisp With Chia and Dates

They were so grand and ripe that I remembered I needed to use them in a unique, summertime sweet. This crumble, which highlights a new topping that’s imbued with a couple of superfoods (almonds, cherries, chia), is simple, expeditious, and makes a lovely portrayal. I think it makes a uniquely elegant presentation in single-serving ramekins or dishes. Fresh cherries get a delicious topping made from dates, almonds, and nutritious chia seeds. This Raw Cherry Crisp With Chia and Date is an excellent refreshing dessert, yet it is wholesome sufficient to serve for meals.

INGREDIENTS

  • Three tablespoons orange juice, divided
  • 1 cup pitted dates
  • 3/4 cup slivered almonds
  • 1/3 cup chia seeds
  • 1 1/2 teaspoon ground cinnamon

 

INSTRUCTIONS

 

  • Toss 2 pounds cherries with the orange juice and vanilla.
  • Spoon into an 8-inch-square dish and smooth the top.
  • In a blender, combine dates, almonds, chia seeds and cinnamon and process until coarsely ground.
  • Pour in remaining orange juice and pulse until mixed.
  • Spoon the chia mixture evenly over the top of cherries and serve
