Fresh summer essence that makes an excellent topper for salads or sides with a bbq feast. Add a few cilantro for an additional new pop if you want. You could also savor it up with some raw jalapeno. I created this method myself, and my family loved it. I genuinely hope that you will eat it and love it too. Summer never felt so relaxed. Enliven your regular salsa with refreshing watermelon and roasted corn to provoke mouth-watering stability of sweet and smoky tastes in every bite. Attach jalapeños for a fresh kick and use on top of white fish similar to tilapia. When summer comes round, I love to take influence from the marvelous fresh seasonal produce to generate light and healthy dishes. I’ve performed it with both raw and cooked corn. Each is relatively good.

INGREDIENTS

  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
  • ¾ teaspoon ground coriander
  • ½ teaspoon chill powder
  • ½ teaspoon salt
  • One ear leftover cooked corn, kernels cut off the cob
  • Two medium tomatoes, cored, seeded, and cut into ½ inch dice
  • 1/3 cup diced sweet onion
  • One jalapeno pepper halved, seeded, and finely chopped
  • 1 ½ cup ½ inch cups watermelon

INSTRUCTIONS

  • Mix lime juice, olive oil, coriander, chili powder, salt
  • Mix in bowl corn, tomatoes, onion, jalapeno
  • Add the mixture into this bowl.
