  • Four small sweet potatoes

  • kosher salt
  • ½ cup shredded Cheddar cheese
  • Guacamole & Toppings
  • One ripe avocado
  • One tablespoon lime juice
  • One clove garlic, minced
  • salt
  • ¼ cup chopped tomato
  • Two tablespoons minced red onion
  • Chopped cilantro for garnish

 

 

INSTRUCTIONS

  • Tightly cover sweet potatoes in foil and place on a baking sheet and roast at 400 degrees F for 50-60 mins.
  • Slice the potatoes in half and bail out the flesh.
  • Place the sweet potato halves on the baking sheet.
  • Brush with olive oil and scatter the kosher salt.
  • Bake at 400 degrees F for 20-30 mins.
  • Cut each skin in half vertically and return to the baking sheet, sprinkle Cheddar.
  • Bake for 8 to 10 minutes.
