Spiralized Jicama Shoestrings with Chipotle Aioli

Whenever I spiralize a fresh vegetable, I want to yell on top of the rooftops and let everyone know how overwhelming it is. Spiralizing transforms the way we eat vegetables.

Now joins jicama, as a classic example of how spiralizing a vegetable varies not only its shape and texture but also its flavour. Typically, jicama is pretty smooth and quiet. However, when you spiralize jicama, season it and cook it. It’s delicious and a merry way to join a new veggie into your custom. Jicama is a vegetable that’s origin to Mexico and is most commonly seen as a slaw or served crunchy and fresh in a salad. It’s also a sustained vegetable, which makes it accessible year-round.

To spiralize the vegetable, you need to peel it (it can be stripped using a peeler or just by chopping off the edges and skinning off the skin with your fingers) and place it into the spiralizer. Spiralized vegetables aren’t just pasta imposters. Use your spiralizer to turn vegetables into healthier oven-fried shoestrings that are perfect for dipping in spicy aioli for an easy appetizer.

 

INGREDIENTS

  • One large peeled jicama
  • One small trimmed and peeled red onion
  • Two tablespoons extra-virgin olive oil
  • Three slices lightly toasted whole-grain bread
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon ground pepper
  • ¼ teaspoon cayenne pepper
  • ½ cup low-fat mayonnaise
  • One tablespoon minced fresh herbs, such as parsley, cilantro and chives
  • One clove minced garlic
  • 1/4-1/2 teaspoon ground chipotle pepper

INSTRUCTIONS

  • Using a vegetable spiralizer, spiralize jicama and onion and place in a bowl and add olive oil to it.
  • Blend the bread in a blender into crumbs.
  • Add to the bowl along with Parmesan, pepper and cayenne and mix it well.
  • Divide the mix and put in 2 large baking sheets
  • Bake it for 425 degrees F for 30 mins.
  • Combine mayonnaise, parsley, cilantro, garlic, chives and chipotle to taste in a small bowl.
  • Serve the shoestrings with the aioli.
