  • One 4-ounce can of chopped green chiles
  • Salt- as you want
  • Freshly ground pepper to taste
  • Two large eggs
  • Four whole-wheat flour tortillas
  • ½ cup tomato salsa
  • ¼ cup shredded Cheddar





  • Wrap the whole-wheat tortillas in a foil and heat in oven at 350-degree F for 5 minutes.
  • Whisk the egg, salt and pepper with a fork.
  • Heat the olive oil in a nonstick skillet. Add green chiles and cook well.
  • Pour the egg mixture into the skillet and cook on medium-low heat for 1 ½ – 2 ½ minutes.
  • Stir the egg-chilli mix with a wooden spoon, until some curds have formed.
  • Split the egg mixture and add cheddar cheese among warm tortillas and roll each one into a burrito.
  • Wrap the burrito with a foil paper and when you serve, top the burrito with salsa and sour cream.
