INGREDIENTS

  • 1 pound beef oxtail, cut into pieces
  • 1 large onion, chopped
  • 1 green onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon of minced fresh ginger root
  • 1 scotch bonnet chile pepper, chopped
  • 2 tablespoon of soy sauce
  • 1 sprig fresh thyme, chopped
  • ½ teaspoon of salt
  • 1 teaspoon of black pepper
  • 2 tablespoons of vegetable oil
  • 1 ½ cups of water
  • 1 cup of canned fava beans, drained
  • 1 teaspoon of whole allspice berries
  • 1 tablespoon of cornstarch
  • 2 tablespoons of water

 

INSTRUCTIONS

  • Toss the oxtail, the onion, green onion, garlic, ginger, chile pepper, soy sauce, thyme, salt, and pepper.
  • Cook over medium-high heat until browned, 10 minutes, then place into a pressure cooker.
  • Pour in water and cook at pressure for 25 minutes.
  • Remove from heat and remove lid; Add fava beans, allspice berries.
  • Bring to simmer over medium-high heat and stir in the dissolved cornstarch with water.
  • Cook until sauce is thick and beans are tender.
