INGREDIENTS

 

  • 4 (6 ounces) thick-cut pork chops
  • Eight slices of smoked Gouda cheese
  • ½ pound of fresh spinach, rinsed and torn into bite-size pieces
  • Three tablespoons of horseradish mustard
  • 1 cup of panko crumbs or breadcrumbs
  • Creole-style seasoning to taste

 

INSTRUCTIONS

 

  • Preheat the oven to 400 degrees F.
  • Lay each chop on a flat surface, and with a sharp knife, cut a pocket into the pork chops, leaving three sides intact.
  • Stuff each chop with spinach, cheese.
  • In a shallow dish place panko crumbs and coat each chop with a tinny layer of horseradish, and then roll fully in crumbs.
  • Arrange in a baking dish and sprinkle with Cajun seasoning.
  • Bake for 45 minutes.
