This Carrot Soup is packed with carrots but gets a ton of added taste from toasted onions, garlic, ginger, and the other ingredients and savors. INGREDIENTS

        

  • 1 tablespoon of butter
  • 1 tablespoon of extra virgin olive oil
  • 1 cup of chopped celery
  • 1 cup of chopped onion
  • 1 teaspoon of chopped fresh thyme
  • 2 cloves of garlic
  • 1 full cup of chopped carrots
  • 2 cups of water
  • 2 cups of any broth
  • Salt- as you want
  • ½ teaspoon of pepper

 

INSTRUCTIONS

  • In a heated pan (medium heat) add butter and extra-virgin olive oil
  • Now add the chopped onions and celery, stir it occasionally, until it turns soft
  • Add garlic and thyme; cook and stir them until a good fragrance arise
  • Add the fine-chopped carrots also the water and broth
  • Reduce the heat to simmer and cook it for 25 minutes.
  • Pour the soup in batches in a blender and blend them (Careful! It’s too hot)
  • When it becomes very smooth and creamy and salt and pepper
  • Mix to combine and Serve them hot.
