Banana Oatmeal Snack Cookies

These cookies are not the same as the usual oatmeal cookies. They are very crispy on the surface with a soft, chewy core. The oats provide the chewy feeling, and the type of oats you select will affect the overall taste. I prefer the quality of rolled or quick oats, I notice the oat flour a little sticky, but some kids may favour the softer texture.

I was clearing out the cupboard to remove odds and ends, and we had a pile of uneven, ripe bananas remaining silently on the counter. I apparently should have dropped them and returned with a purpose to my cases and tape, but why do something as un-fun as gathering when you can cook healthy banana cookies alternatively?

Plus, if I baked Banana Oatmeal Cookies, that also meant that I would apply up the last of our pack of oatmeal. One less part to squeeze into a case!

As if that were not motivation enough to run and make a batch of Banana Oatmeal Cookies right then and there, my pyroclastic-bake mind got up with a different idea.

If I liked a few cookies covered with a smear of nut butter to form a substitute as Peanut Butter Banana Oatmeal Cookies? I’d decrease our amount of cupboard things to transport even further!

Fine. These cookies wanted to proceed quickly.

 

INGREDIENTS

  • Two ripe bananas, mashed
  • ½ cup of unsweetened applesauce
  • 1- ½ cup of quick-cooking oats
  • ½ cup of finely ground walnuts
  • 1/2 cup of finely chopped dates

 

 

INSTRUCTIONS

 

  • Combine bananas, applesauce, oats, walnuts and dates in a medium bowl until evenly blended.
  • Scoop onto a parchment-paper-lined baking sheet.
  • Bake at 350-degree F until golden, about 30 minutes. Cool on a wire rack.
